Eat the Rainbow, Colorful Pickled Veggies

This is by far the simplest MasterChef Junior recipe in the cookbook, so I don’t know why it took me this long to make it. I have never pickled anything before, but now I want to try my own dill pickles one day soon. I am loving all the options that have been opened up to me!

Radishes, carrots, english cucumbers, vinegar, and sugar are all that is needed for this quick recipe. There is no cooking required, so this is a great one for hot Texas days (which we are still having; thanks global warming). Plus, I got to use my new mandolin, which was SO fun! I was standing there in my kitchen scheming on more vegetables to cut 🙂

Plus, you just can’t beat the colors of vegetables in this recipe, am I right? I love when my fridge and my plate are full of bright, beautiful veggies. More vegetable recipes coming to the blog soon.

What did I do differently? Nothing!

    Hey Dani! Love all your posts! Sounds like you’re having fun with this new venture. I had to make a comment because I just made refrigerator pickles yesterday. Have to let them set 3 days. In Minnesota when we had a big garden I made them all the time. So easy! I do put onion in mine along with pickling spices and celery seed, vinegar and sugar. Papa loves them! Keep up the good work! Sounds like your eating pretty healthy! Hugs and Love! Grandma

    • Pickles are on my list! I wish I was a better gardener haha, I have a black thumb. But I do try to eat healthy most of the time…but I think life is all about balance ;P Love y’all and thank you for following along on my posts!
