First of all, allow me to address the elephant in the room… the garnish is thin sliced limes, but they totally look like cucumbers. I can’t believe I didn’t see it until I was editing the photos. *Facepalm*

I have a lot to learn about pies, not just styling them. This was a process and not every step worked out perfectly.

I read in the description of the recipe that pies are time consuming, but they are especially time consuming when you keep messing up. I don’t know what I did wrong the first time but the crust sank while it was in the oven. I was surprised because it looked picture perfect before going in.

So I did some Google research about the problem I was having and implemented a few new strategies for my second attempt, and it worked! The crust finally came out great (although it definitely could have been prettier). I don’t know how to get those pretty little grooves in there yet.

Next was the filling. It was taking a lot longer to thicken in the saucepan, but since I have never made a pie filling before, I didn’t know how thick it should really be. Then, even after letting it chill for two hours, like the recipe said, I knew it was still not thick enough. I decided to let it chill overnight, hoping that would do the trick. I must have done something wrong in one of the early steps because when I cut into the pie, it all started oozing. Honestly, it tasted great, which is the most important thing. In fact, if you don’t mind the oozing, it would have been a great pie to enjoy family style, where everyone circles around and digs in with a fork. But if you’re cutting them into slices… this is not the pie for you.

Overall, for a non-baker, I’m pretty proud that I tackled a pie all by myself and it wasn’t a complete disaster. Minor disaster? Sure. But I will always fondly remember this cucumber pie as a great first try 😉
