Raspberry Mousse, Gelee, and Lime Whipped Cream Parfaits

I made these on the same day I made the raspberry tarts, which was great because they both had similar ingredients (I got to make a lot of whipped cream!). Both recipes required lots of prep time AND rest time, which made for a long day of baking. Several steps in the recipes had me leave parts of the ingredients in the fridge to set or cool. So while the gelee in this dessert was setting in the fridge, I worked on the tarts. And while the cream was cooling in the fridge, I made the raspberry mouse. I felt like I was actually a contestant on MasterChef Junior, having to juggle multiple recipes at once, timing them perfectly.

Although it took a while to assemble, this was a relatively simple dessert that would be great to prep ahead of time when you want to have a fancy dessert, or maybe just to make your Monday a little sweeter!
