Creamy Coconut Rice pudding with a sweet mango compote on top, garnished with a small mint leaf.

What a perfect spring/summer dessert this turned out to be. This is my second time having rice pudding, but it was totally different this time around. My first experience was another MasterChef Junior dessert, Rice Pudding with Fig Ver-Jus. That one had more of a fall vibe to it, whereas this one is definitely a warm weather dessert.

The coconut and mango flavors alone are enough to make you feel like you should be at a restaurant on a beach somewhere. Additionally, this dessert can be served warm or chilled. That means on a summer day you could make this in the morning while it’s still cool and not so painful to turn on the stove, and serve it chilled after dinner when you need to switch it up (aka not having ice cream for the 10th night in a row ;P)

Lastly, it’s super simple to prepare, which makes a girl like me super happy. I’m not a big baker, so I love quick, no bake desserts. There are only two simple steps using just two pans. If you love quick, no bake desserts too, you should check out my original recipe: Keto No Bake Truffles <3
