Pappardelle with “Vodka / No Vodka” Sausage Sauce

After hours of work, the third pappardelle dish is done (My kitchen is a WRECK, by the way)! I intentionally saved this one for last because I thought it was going to be the most satisfying to eat after an entire day of cooking (I immediately put the other two in Tupperware containers to eat later) and I was right! This dish was beyond delicious!
This recipe took a little longer to cook than the previous two, but it was still simple and fairly quick. This virgin vodka sauce was so flavorful, with hand-crushed tomatoes, fresh parsley, oregano, and basil. Once my sauce was thickened, I added the cooked hot Italian sausage and my kitchen was smelling so good! In total, this sauce took about 20 minutes to make.

Even though Jimmy had to omit the vodka since he was a minor, that doesn’t mean I have to, right? I left it out of the sauce… but decided to make a vodka cocktail to go with it. Cheers to a long, successful day of making my first ever pasta from scratch!

What I did differently:
- I added more sausage than it called for. We don’t skimp on meat in this house.
- I garnished with parsley instead of basil, as instructed, because my basil had unfortunately, spoiled prematurely.
