Pappardelle with Bacon Cream Sauce

Y’all. I have been avoiding the pasta section of the MasterChef Junior cookbook because it has been so intimidating. But one of my mantras for this journey is “Do it afraid!”
There are nine pasta recipes, and three of them are pappardelle. So I thought, why not bust out all three in one day? I’m not saying it was the worst idea ever…but it was definitely an exhausting day. However, despite being nervous, all three were great successes!

Honestly, it was pretty fun at first, but boy does it take some time to make pasta from scratch! I definitely would not have been able to do that for a timed challenge, like the MasterChef Junior contestants. Once it was done though, I was so proud of myself.
Apart from the time it takes to make the pasta from scratch, the recipe is simple and easy. Everyone knows how to cook bacon, and the cream sauce only takes a few minutes to prepare.

What I did differently:
- The dough started out a little dry, so I added one more egg and two more yolks.
- I topped the dish with more bacon. No regrets.
- I garnished it with fresh chopped parsley. Never skip the herbs!

My lord this was one of the most flavorful pasta dishes I’ve ever had. We sat down to eat and I swear neither of us stopped to breathe until the dish was empty…🤤🤤🤤
