This refreshing mojito was inspired by Mother Earth herself and served up in some fun mushroom glasses my sweet friend got me since she knew I wanted to make some fun cocktails during April for Earth Month.

The Earth Day-Inspired Mojito is a delightfully green cocktail that is sweet, slightly sour, and super yummy. It’s color and taste are perfect for Spring/Summer. If you need another springtime cocktail, you should definitely try my Cucumber Gin and Tonic.

There is Midori and Apple Pucker (Sour Apple Liqueur) in it, plus naturally green ingredients like mint and lime.
I wish. That glow comes from the lights I used in the shot.
While this glass may look small, it’s a 6oz-8oz drink, depending on how much soda water you top it off with.

Earth Day Mojito
Ingredients
- 5 mint leaves, muddled
- Half a lime, muddled
- 2 oz white rum
- 1 oz apple pucker
- 1 oz midori
- 1 oz pineapple juice
- Half a lemon, juiced
- Soda water, to taste
- Mint leaves (optional garnish)
- Lime Wedge (optional garnish)
Directions
- Add your muddled mint and lime wedges to a cocktail shaker. Fill with ice.
- Add rum, liqueurs, and pineapple/lemon juice. Shake to combine.
- Pour into glass of choice (with fresh ice, not pictured) top with 1-3 oz of soda water.
- Stir, add garnishes (optional), and enjoy!
